It’s May in Delhi which means soaring temperatures often crossing 45 C in the afternoon with little respite during the night. The good news is that appetite is way down and all I want to do is drink something cold or eat some sweet cold juicy hydrating fruit or eat endless amounts of cold salad.
Sometimes, it can be boring to keep munching on salad so I made this cold soup, (also called gazpacho in German) which is like liquid salad in a bowl. Since it is made entirely of vegetables, it is extremely low in calories and very high in fibre.
It requires typical summer vegetables like cucumber, mint, basil, tomatoes, zucchini and red pepper. To kick up the taste, I add lime juice and jalapeno peppers in brine.
It is my favourite summer evening soup combined with some of my favourite oil and gluten free crackers from My Pure Path in Mumbai.
Chilled Low Calorie Hydrating Summer Soup Recipe
- 3 medium tomatoes, chopped into 4 slices
- 1/2 cucumber or yellow zucchini, chopped into rounds or large slices
- 1/2 red pepper, roughly chopped
- 2 tbsp mint leaves
- 1 tbsp basil or coriander or parsley leaves
- 1 tbsp lime juice
- 4-6 slices of jalapeno peppers in brine
- Salt to taste
- 2 cups water
- Ice as needed
Whizz it all in the food processor by pulsing till fine chopped but not a mush. Decorate with a basil leaf before serving and add in some ice-cube for a really chilled treat.
Note: If you use the blender, it may all turn brown which is not very appetizing. By now you know I really do like easy peasy recipes. 🙂
